Menu and Shopping List #3


Menu
Arcadian Hot Pot
Directions: slice and brown eckrich sausage, cook onions and okra in drippings.  Add sausage, veggies, shredded chicken (from a rotisserie chicken), petite-diced tomatoes, and 2-3 boxes of chicken broth to soup pot.  Add salt, garlic, Tabasco, and Tony’s to taste.  Serve over rice.

Chicken Pepperoni Marinara - you should have pepperoni and marinara leftover from the homemade pizza, if not, add it to your list

Burritos

Steaks, potatoes, and green beans

Menu and Shopping List - Week 2


Menu


Chicken and Dumplings (Slow cooker)

Lasagna, salad, garlic bread

Fried steak, mashed potatoes, and green beans
Coat cubed steak with flour and cook in a little oil on the stovetop

Salsa Verde Chicken (slow cooker)  

Homemade pizza – like Marilyn from Star Pizza (pepperoni, Canadian bacon, onion, tomato, garlic)

Leftovers

Eat out - You deserve it!

Menu Plan and Shopping list

I figure if I am going to put work into our menu, I might as well share and save someone else the time!

I shopped at two stores, one cheaper but with less selection, and was able to get the entire list  plus staples (fruit, yogurt, granola bars, peanut butter, etc.) for about $150.  Good luck!


Menu

Pork Loin with Cherries (Slow Cooker) with mashed red potatoes and green beans


Tomato Corn Chowder and Rotisserie Chicken with salad (cook both chickens and save the meat from one for the Green Chili Chicken soup)


Steaks with green beans and red potatoes


Kalua Pork and rice (slow cooker) (just use regular sea salt and maybe a little soy sauce)

Roast Beef Sandwiches – sauté a cut up onion, add cut up roast beef, butter and toast sourdough in the pan and make hot sandwiches with provolone cheese and the meat/onion mix

breakfast casserole – 1 lb sausage browned, beat 12 eggs and 1 cup milk, sprinkle ½ bag of velveeta shreds, then meat, then egg mix, then rest of cheese.  bake at 350 for 30ish minutes

Organized

Sometimes in the middle of what I think is a great idea,
I realize that I might be taking my need for "organization" a little too far.

Summer 2011

To Sum it up...
Celebrated six years!

Normally at this point, I'm ready for school to start again and to settle into a routine.  This summer I'm not.  It's been nice to just have time.  I've read more books this summer than the past 6 combined.  (I've also taken more naps than the past 6 years combined.)  I've been able to just think and process and reflect.  I've been able to see Jeff more even though he is still working most nights...lunch has become our new dinner.  We "graduated" from counseling after eleven months.  We've found a Sunday school class that we love and have found a place to truly learn and grow and be transparent.  I think I might have even learned how to iron this summer!

I have about two more weeks of summer and a few more things on my "to do" list.  I'll get them done and hopefully I'll be ready for the routine when it happens.
